Vanilla is grown within 10-20 degrees of the equator. Most vanilla beans available today are from Uganda, Madagascar, Mexico and Tahiti.
V. Planifolia, the variety grown in Uganda is high quality. Vanilla beans that are produced in Uganda are much rarer than other types and have an incredible flavor profile and aroma. The aroma is earthy with hints of milk chocolate, while the flavor is bold because of the high levels of vanillin. These beans are similar in flavor to the creamy Madagascar beans, but are sweeter with a hint of milk chocolate which compliments dishes that also include chocolate. They are perfect for making incredibly rich desserts including ice cream, cookies and drinks.
Wrap your vanilla beans in either wax paper or plastic wrap and store in an airtight glass or Tupperware container. Be sure to squeeze out as much air as possible from the container to prevent the vanilla beans from drying out.
You can also store vanilla beans in vaccum bags and squeeze ot the air using a vaccum sealer machine.

Vanilla (Vanilla planifolia) is a popular flavor and key ingredient in countless desserts. But with the variety of vanilla extracts available on the market, with varying names, strengths, and flavor profiles (not to mention vanilla extract prices), it can be hard to know which to choose for whatever recipe you’re making.
Real, “pure” vanilla extracts made from higher-quality vanilla seed pods harvested by hand have a typically stronger vanilla fragrance, strong flavor profiles as compared to vanilla extracts synthesized in a lab.
Always go for extracts from pure natural vanilla seed pods harvested by hand.
Vanilla beans grade range from grade A, Grade B, and Split. There are basically 3 main features between these grades :
Moisture level
Size of the beans
Curing Process
But let us focus on Grade A for now.
Grade A Vanilla beans also called gourmet or TK or Black or prime vanilla beans, they have higher moisture level (25-35%) compared to Vanilla grade B and are very dark brown/ black in color.
Grade A size minimum is 17cm up, why? it means that farmer/ curer didn’t use young vanilla beans. why? Young vanilla beans have less seeds and vanillin contents.
The process of making Grade A vanilla beans (curing process) are long which can take around 6 months and sometimes can be more.
Most store-bought vanilla extracts are are weaker simply because they are single-fold. Single-fold simply means using few vanilla beans
Strong vanilla extract is known as double-fold and it’s pretty pricey because it requires a lot of vanilla beans.
Since double-fold can get expensive, you can opt for about 5-6 vanilla beans (1/2 ounce total) per 8 ounces of alcohol.
This is the best balance of taste and price.
